The oven

The oven is the first thing you see: a dome skinned in broken majolica, cobalt and sunflower and white, a couple of steps from the nearest table. Its floor holds heat all evening, which is what a Neapolitan base needs. A very short bake at a very high temperature, so the rim puffs and blisters before the middle dries out.

It is unforgiving, because nothing hides in ninety seconds. The compliment guests keep paying is that the dough itself has flavour. Order the plainest thing on the list and you will know inside one slice.

A side street in San Pawl il-Baħar

Guests describe it as almost hidden, and that is fair. A modest frontage on a residential street, no promenade, nothing to catch you as you walk past. The reviews that say so are the same ones that go on to call the oven the most interesting thing in the room.

It fills from about eight. Call ahead if there are more than two of you, and expect a short wait at the weekend even if you did. Walk ins are taken whenever a table comes free.

Do you take bookings?

By phone, on +356 2702 0248. There is no online booking system. The room is small, so a call is worth making for a weekend evening or for a group.

What are the opening hours?

Dinner only. Tuesday to Thursday from 18:00 to 23:00, Friday and Saturday from 18:30 to 23:30, and Sunday from 18:00 to 23:15. Closed all day Monday.

How much is a pizza?

The Marinara is EUR 8.50 and the Margherita EUR 9.50. Most of the list sits between EUR 11.50 and EUR 13, and the largest pizzas reach EUR 16.50. Prices here come from the Wolt delivery listing.

Are the daily specials and the meloncello priced separately?

Yes. The specials board and the house meloncello are not on the printed menu and are charged in addition to it, so ask what they cost when they are offered to you. It takes one question and it keeps the bill from being a surprise.

Can I order delivery or takeaway?

Delivery runs through Wolt, and takeaway is available from the counter. Several guests mention takeaway pizzas being ready in about five minutes once the oven is going.

Is there anything for vegetarians?

Yes. The Marinara is vegan as it stands, and the Funghi, Bufalina, Vegetable, 5 Formaggi and Parmigiana pizzas are vegetarian, as is the Made in Sud salad and all four desserts.

Does it get hot inside?

In high summer, yes. The wood oven is in the dining room rather than behind a wall, which is what makes the pizza and also what makes the room warm in July and August. Ask for a table near the door, or come earlier in the evening.
